Walnut Banana Protein Bread


YUM! I love making this when I notice my bananas are getting a bit too ripe. It's a great snack to have in the house for grab-and-go when you are hungry or for a pre-workout pick me up.


1/2 cup of vanilla protein powder

1 cup of liquid egg whites (or four large eggs)

1/2 cup of pumpkin puree

1-2 bananas (one to mix in batter) optional one if you want to bury it inside of the mix (like in photo above)

1/2 cup of coconut flour or 1 cup of regular flour

1/4 cup of rolled oats

1 tablespoon of cinnamon

Walnuts (you can add these to the mix and sprinkle on top)


Spray loaf pan with non-stick spray. Mix all ingredients together (except for the optional second banana and walnuts for on top) and pour in loaf pan. Pour half into the pan and if you want the optional banana inside, place banana right on top of mix and cover banana with remaining batter. Bake at 320 for about 25 minutes or until done. (You can check if its done by sticking a knife in the middle and if it comes out clean the bread is done!)






This refreshing mint summer salad is a nice spin to a traditional watermelon dish.

It’s a quick and easy three ingredient combo- perfect to bring as a side dish to a summer BBQ.

Mint has many benefits including promotion of digestion, natural stimulant, fights acne and oral infections, and contains potent antioxidants that help and prevent allergies.



Watermelon (cut up)

Cucumber (sliced)

Minted (chopped)


Toss together and enjoy!

Oven Roasted Sweet Potato Fries

Such a simple yet delicious side, especially nice as the colder weather approaches.

This batch of sweet potato fries has been my best to date, as they got crispy, just the way I like them.


Sweet Potatos

Olive oil

Garlic powder

Sea salt


Preheat oven to 350 degrees.

Cut one large sweet potato in half, and then into 1/4″ thin strips. Toss the sweet potatoes with 1-2 capfuls of olive oil, garlic powder and sea salt.

Spread the strips evenly on to a baking pan. Make sure to not overcrowd, as we want them to roast.  I make sure most are separated from each other.

Place in the oven and cook for 40-50 minutes, turning the fries 2-3 times during that time to cook evenly.

Remove once the edges begin to brown and crisp.


Sweet Potato Tuna Bites


I try to incorporate more fish into my diet, and this is a delicious budget-friendly recipe that is sweet and spicy at the same time. I like this as a post workout- meal, or a snack to fuel me during the day.


  • 2 cans of consciously caught tuna
  • 1/2 to 3/4 large sweet potato
  • 1 egg
  • 1/4 cup almond floor
  • Cayenne pepper, paprika, sea salt and pepper to taste
  • Cilantro for garnish


Preheat oven to 375. First bake sweet potato in the oven. Scrape out the inside and let cool. (I used leftover sweet potato and it worked great!) Combine all ingredients in a bowl and mix together. Don’t be afraid to get your hands dirty- I just mashed it all together with my hands!

Form small patties and place in a pan, leaving about an inch in-between each patty. Bake for about  12 minutes on each side, until a nice golden color. Take out and garnish with cilantro. YUM!
