SWEET POTATO TUNA BITES
I try to incorporate more fish into my diet, and this is a delicious budget-friendly recipe that is sweet and spicy at the same time. I like this as a post workout- meal, or a snack to fuel me during the day.
- 2 cans of consciously caught tuna
- 1/2 to 3/4 large sweet potato
- 1 egg
- 1/4 cup almond floor
- Cayenne pepper, paprika, sea salt and pepper to taste
- Cilantro for garnish
Preheat oven to 375. First bake sweet potato in the oven. Scrape out the inside and let cool. (I used leftover sweet potato and it worked great!) Combine all ingredients in a bowl and mix together. Don’t be afraid to get your hands dirty- I just mashed it all together with my hands!
Form small patties and place in a pan, leaving about an inch in-between each patty. Bake for about 12 minutes on each side, until a nice golden color. Take out and garnish with cilantro. YUM!
