Walnut Banana Protein Bread


YUM! I love making this when I notice my bananas are getting a bit too ripe. It's a great snack to have in the house for grab-and-go when you are hungry or for a pre-workout pick me up.


1/2 cup of vanilla protein powder

1 cup of liquid egg whites (or four large eggs)

1/2 cup of pumpkin puree

1-2 bananas (one to mix in batter) optional one if you want to bury it inside of the mix (like in photo above)

1/2 cup of coconut flour or 1 cup of regular flour

1/4 cup of rolled oats

1 tablespoon of cinnamon

Walnuts (you can add these to the mix and sprinkle on top)


Spray loaf pan with non-stick spray. Mix all ingredients together (except for the optional second banana and walnuts for on top) and pour in loaf pan. Pour half into the pan and if you want the optional banana inside, place banana right on top of mix and cover banana with remaining batter. Bake at 320 for about 25 minutes or until done. (You can check if its done by sticking a knife in the middle and if it comes out clean the bread is done!)
